Road Tripping Blackberry Crisp

 
 
OK....I really should be studying, but instead my heart wanted to share this quick dessert-on-the-go idea with you!  With grilling season upon our door steps, it is always nice to have a quick/impressive idea in your back pocket when someone says, "You can bring the dessert".
 
Last week I had a fun invite for 'Dinner on the Deck' with a friend.  In reciprocation of the kind offer of hospitality, I wanted to be a contributor to the meal.  Hmmm...what could I take that would be impressive and would travel well?  'Dinner on the Deck' was a good 2 1/2 hours away.
 
I have always been a sort of freak about wanting things to be fresh and warm out of the oven when I serve them to others.  This would certainly be hard to accomplish with the long drive ahead.  Hmmm....why not prep all of the ingredients ahead of time and quickly throw them together upon my arrival?   While the rest of the dinner is doing it's thing on the grill, my dessert could be getting all happy in the oven?  And who doesn't like the smells that happen when dessert is getting all happy in the oven? 
 
I went to my trusty recipe files and choose an easy fruit crisp recipe that I have used for years...with my family and at the café.  It is a bit old fashioned; a true comfort food...and with a scoop of vanilla ice cream...how could you possibly go wrong? 
 
Here is how I assembled the ingredients for my Road Tripping Blackberry Crisp:
 
Place in a small zip lock baggie:
3/4 cup organic raw sugar
3 Tbsp. organic white whole wheat flour
 
Place in a larger zip lock baggie:
1 cup organic brown sugar
3/4 cup white whole wheat flour
3/4 cup organic rolled oats
1/2 cup (or more) or walnuts
1 tsp. organic cinnamon
 
In a pretty pie plate, I assembled the above ingredients along with:
1 stick of organic butter
2-3 cups of organic blackberries
 
Now we were ready to hit the road. 
1. When I arrived, I dumped the berries in the pie plate and tossed them with the small bag of sugar and flour.
2. Next I cut the stick of butter into smaller chunks (so it would be easier to incorporate) and tossed it into the larger bag of ingredients.  Here is the fun part...simply knead the butter along with the other ingredients until the mixture is nicely incorporated and crumbly.  This saves the mess of any bowls, because after you sprinkle the mixture over the berries...the bag is tossed in the trash.  (Obviously, it wouldn't be a good idea to take something that is going to create a big mess or fuss in your host's kitchen.)
3.  Put your creation in the oven at 375 degrees and bake for approximately 30 minutes or until golden brown and bubbly.
 
Now pour yourself a glass of wine and head out to the deck and see if you can help with the rest of the meal!!
 
**Another cool thing about this dessert, is that you could use almost any fresh fruit that suits your fancy.  Raspberries, strawberries, blueberries, rhubarb, apples...or a grand combination of all of the above!  Your friends will be super impressed and who knows...they just might invite you again!

Pumpkin Doughnut Pleasure

11.12.13 Random Anniversary Thoughts
